Simple Sauce with Mushrooms

One of the first things I learned to cook was mushroom sauce. It was also a part of the first meal I cooked for my Husband. We love it and I make it very often! It’s so simple and can be served with almost any meat: chicken, pork chops, steak; over rice, or pasta. It’s comfort food at its best!

Over the years, I perfected my recipe and instead of flour, I prefer to thicken it with cornstarch. Instead of using cream, I prefer to use half and half. It’s perfect every time. I hope you will give it a try and enjoy it as much as we do!

Ingredients:

  • mushrooms: I use white or baby Bella
  • garlic
  • onion
  • butter
  • half and half or whole milk
  • cornstarch
  • salt and pepper

Difference between mushroom sauce and mushroom gravy:

This recipe is for a sauce. Creamy and smooth sauce with mushrooms. To make a gravy, I would use vegetable stock or water with cornstarch. It would be clear, not creamy but still delicious!

Best tips for making the perfect mushroom sauce:

  • Prep the veggies before you start cooking. The sauce comes together rather quickly.
  • Just before you add the half and half and cornstarch mixture to mushrooms, give it another whisk. Cornstarch tends to settle at the bottom of the bowl if the liquid sits for a moment.
  • Do not walk away from the sauce once you add the half and half. It will thicken quickly. Stir it often.
  • The sauce will thicken even more as it cools.

Can I make it ahead of time?

Yes, this mushroom sauce can be made ahead of time. However, you need to keep in mind that it will thicken as it cools. If you refrigerate it, you will need to add a splash of water or half and half to the sauce while reheating to bring back the saucy texture.
